• Twøbays Full Grain Stout (Gluten Free) (Brewfather version)

Brewfather Batch

Ingredients

• 3.6kg Pale Millet Malt
• 250g Pale Buckwheat Malt (doesn't look very pale!)
• 300g Chocolate Millet Malt
• 400g Dark Roast Millet
• 400g Gas Hog Rice Malt
• 100g Treacle
• 40g Fuggles hops (4.5% AA)
• 10g El Dorado hops (10% AA) - didn't have enough Fuggles.
• 20mL Beta-glucanase
• 20mL Alpha-amylase
• 20mL Glucoamylase
• 4g Yeast nutrient
• 5g Irish moss
• 2 x Safale US-05 yeast packets
• Sachet of Mangrove Jacks Liquid Finings

Used Brewzilla for mashing.

Process

• Milled millet twice to ~0.7mm.
• Milled rice twice to ~0.9mm.
• Buckwheat was hard to mill, went as wide as possible then milled with the second rice run.
• Brought 22.3L of water to 85C.
• Add malts.
• Stir on and off for 20 minutes.
• Cooled to 50C.
• Add 20mL of beta glucanase, stiring for 30 minutes.
• Add 20mL of alpha amylase and glucoamylase, set temperature to 80C for 120 minutes.
• Sparge with 5.7L water.
• Started boil with 24.8L wort, 11% brix, pH 4.75.
• Added 30g Fuggles (forgot the bag)
• After 45 minute boil add 10g Fuggles, 10g El Dorado, irish moss and nutrient.
• Boil for 15 mins more.
• Turn off heaters.
• Chill wort (chiller in wort as pump was blocked)
• Pump to fermenter (~40C) filtered through muslin bag.
• Cooled to 20C and pitch yeast.

Ended up with 20.5L in Fermzilla.

The yeast has an apparent attenuation of 81% If that is so the final gravity should be...

FG = (SG - 1000) * (1 - AA/100) + 1000 
   = ((1056 - 1000) * (1 - 88/100)) + 1000
   = 1007

Notes

• Yeast pitched at 20C.
• Temperature set at 20C.
• Used iSpindel4.
• Spunding valve set to 20 PSI (ale should have 2.3-2.6 volumes of CO2, used 2.0 to try and stop the iSpindel leaking).
• ABV = 1.646 * RI - 2.703 * (145 - 145 / SG) - 1.794 = ??
• Grafana plot
• Fermenter split and I wasted most of it on the shed floor due to a plumbing fuck up.
