Brew Number 119

• Twøbays Full Grain English Golden Ale (Gluten Free) (Brewfather version)

Ingredients

• 2.7kg Goldfinch Millet Malt
• 2.7kg Biscuit Rice Malt
• 150g Lyles Golden Syrup
• 60g Fuggles Hops (4.3% AA)
• 5g Still Spirits High Temperature Alpha Amylase
• 2 x Safale S-04 yeast packets

Used Brewzilla for mashing.

Process

• Milled sorghum to ~0.75mm.
• Milled rice malt to ~1.00mm.
• Brought 20L of water to the boil.
• Added sorghum and rice malt.
• Stirred for 5 minutes.
• Added ~5L water.
• Add Alpha Amylase.
• Raised temperature to 90C & held for 120minutes.
• Sparged with 8L? water to bring to ~24L.
• Set to boil.
• Add the golden syrup.
• Add 24g hops (forgot to put in muslin bag).
• Wait 50 minutes.
• Add 36g hops.
• Wait 15 minutes (should have been 10).
• Add ~1.5tsp Irish moss
• Wait another 10 minutes.
• Turn off heaters.
• Add 5g yeast nutrient
• Chill wort (chiller in ice bucket).
• Pump to fermenter (~27C) filtered through muslin bag.
• Pitch yeast.

Ended up with 19L in Fermzilla.

Brew house efficiency calculated at 76.5% / 19.7 PPG.

The yeast has an apparent attenuation of 75% If that is so the final gravity should be...

FG = (SG - 1000) * (1 - AA/100) + 1000 
   = ((1048 - 1000) * (1 - 75/100)) + 1000
   = 1012

• Yeast pitched at 27C.
• Temperature set at 20C.
• Used iSpindel3.
• Spunding valve set to 20 PSI (ale should have 2.3-2.6 volumes of CO2, used 2.0 to try and stop the iSpindel leaking).
• ABV = 1.646 * RI - 2.703 * (145 - 145 / SG) - 1.794 = 1.646 * 6 - 2.703 * (145 - 145 / .994) - 1.794 = 10.4%
