Brew Number 13

  • Goliath American Cream Ale
  • 1kg Pilsner Malt
  • Wyeast Whitbread Ale Yeast (#1099) from #12

Was brought out to 20.7L. Yeast pitched at 22 C

Apparently the yeast has an apparent attenuation of 68-72% If that is so the final gravity should be...

FG = (SG - 1000) * (1 - AA/100) + 1000 
   = ((1032 - 1000) * (1 - 70/100)) + 1000
   = 1009.6

Notes

  • Mashed malt in 2.8L of water at 70C for 1 hour
  • Sparged with 1.8L of water for 15 minutes
  • Boiled malt extract for 1 hour with the lid on
  • Pitched 350mL of yeast starter
  • Used approx 500mL of wort for new starter plus 200mL of the old starter
  • Used 190g of sugar to prime.
  • Got 52 bottles from around 20L of beer.
